We face lastly these problems

1. With Invalid IPN Handshake (from gateway log we see that the problem might be char set)

we follow all WHMCS guide

as we show into our Paypal account the entry was Windows-1252

we change it to utf-8 but nothing happened we still recieve same invalid mails

we try Windows-1253 now ...

2. Further to the above as we was try to find out what is going on with it,

we find out that we can't change on another paygate the default language from Greek to English

so the problem is might be somewhere into our settings

How we can change the WHMCS char set &

why system do not let us to change the default language into paygate

Thank you Ody.

How we can change the WHMCS char set?

http://docs.whmcs.com/Localisation_Tab#System_Charset

Leave at the default value UTF-8 unless your language contains characters not supported by this charset. If you do change it, files need to be resaved under that charset. To do that, open the language file you use from the lang folder in Notepad and then go to File > Save As and choose Encoding Type "ANSI". Save and then reupload and it should be fine again.
